Melt in the Middle Chocolate Pudding

It makes 6 puddings in 150ml moulds (quantity will depend on your mould size)
Ingredients:
300g/11oz Dark cooking chocolate
300g/11oz Butter
144g/5oz Granulated sugar
5 eggs
3 egg yolks
108g/4oz Unsweetened cocoa powder
Method:
1. Measure out the ingredients
2. Melt the chocolate and butter together
3. Stir in the sugar
4. Allow to cool so that eggs won’t scramble then stir in the eggs
5. Stir in the sifted cocoa powder
6. Grease 6 150ml metal moulds
7. Fill the moulds, leaving a centimetre/quarter inch headroom at the top of each mould
8. Allow the puddings to set in fridge until firm
9. Bake at 200C for 10-12 minutes
This should produce a firm outer sponge with a liquid, chocolate interior that oozes out beautifully.
