The last gluten free masterclass was held on 4th September 2009 in the demonstration theatre at Westminster Kingsway College.
Chefs from the Mandarin Oriental, Hyde Park and Rudding Park Hotel, Harrogate, two multi award winning hotels, were demonstrating their creative and wide ranging gluten free bill of fare and experiences to a full house.
Delicious Alchemy educated attendees on the market, the opportunity and managing cross contamination in the kitchen.
It was a fantastic day, which included the demonstration of ten gluten free Yorkshire Tapas dishes by Paul Mackie and Stephanie Moon of Rudding Park.
Their incredible dishes included
Whitby Crab Cocktail with Bread and Butter Crisp, Flat Mushroom with Seasonal Fruit Chutney and Wensleydale Cheese and Delicious Alchemy Muesli Crust.
As well as Deep fried Whitby Smoked Haddock in Premier Gluten Free Beer Batter with Chips and Tartare Sauce Served in a Fish and Chip Cone and Pork Fillet Stuffed with Orchard fruits and Muesli Served with Apple Compote.
Also Crispy deep fried fish cake, Gluten Free Yorkshire Pudding Roast Yorkshire Dales Beef and Horseradish Cream, Skewered Chicken with Tarragon and Gingerbread Crust, Red Wine Poached Pear Yorkshire Blue Cheese and Celeriac Remoulade Bruschetta, Spiced Beef Strips and Onion Bhaji. It was followed by the creation of four incredible afternoon tea pastries by Graham Hornigold of the Mandarin Oriental. They were Raspberry and Mint macaroon, Spiced pineapple and coconut pyramids, Sea salted caramel mousse balls and Black Fig with Wild Honey & Mascarpone Mousse.
