Developing Gluten and Lactose free Menu Options
In October the owner of Delicious Alchemy, Emma Killilea was invited to an awards ceremony at a 5 Star London hotel. She advised the event organisers that she required a gluten free meal but due to a miscommunication, none was available.
Nothing on the event dinner menu was appropriate for someone with a wheat/gluten allergy. The starter was cous cous salad (cous cous is
cracked wheat), the main was salmon en croute and there was a torte for dessert. With a little forethought, this needn't have been the case.
As a substitute, Emma was served stale, shop bought, gluten free bread substitute and butter as a starter, a bland vegetable risotto as a main and a chopped apple with some grapes for dessert. The price of the dinner was £150/head.
